Tautulli is a 3rd party application that you can run alongside your Plex Media Server to monitor activity and track various statistics. Most importantly, these statistics include what has been watched, who watched it, when and where they watched it, and how it was watched.

Setting up a Plex server with Tautulli

Once installed go to "Settings" and "Plex Media Server" at the bottom of the page click the "Fetch Token" button and login to your Plex account. Once that's done select your server at the top of the page at "Plex IP Address or Hostname" press "Verify" and you should be good to go.
